  • 1 bag Gardein beefless tips
  • 3 large garlic cloves, minced

  • 2 cups Guinness stout
  • 3 cups vegetable broth
  • 3 tablespoons tomato paste
  • 1 tablespoon vegan Worcestershire sauce
  • 4 carrots, peeled and cut into chunks
  • 4 yukon gold potatoes, peeled and cut into chunks
  • 1/4 cup cornstarch
  • 1/2 cup water


Instructions

  1. Heat olive oil and sauté onions: In a large pot, heat the olive oil over medium heat. Add the chopped sweet onion and sauté for 5 minutes until translucent and fragrant.
  2. Cook the beefless tips and garlic: Add the Gardein beefless tips to the pot and sauté for 4 minutes until slightly browned but not fully cooked. Then add the minced garlic and cook for an additional 1 minute, stirring constantly.
  3. Add herbs and pepper: Stir in the dried rosemary, dried thyme, and ground black pepper. Cook for 1 minute while stirring to release the flavors.
  4. Pour in liquids: Pour the Guinness stout into the pot and stir well. Then add vegetable broth, tomato paste, and vegan Worcestershire sauce. Mix thoroughly to combine all ingredients.
  5. Add vegetables: Add the peeled and chunked carrots and Yukon gold potatoes into the pot. Stir everything together well.
  6. Simmer the stew: Bring the stew to a boil, then reduce heat to low. Cover and let it simmer gently for 30 minutes, stirring occasionally to prevent sticking and ensure even cooking.
  7. Thicken the stew: In a small bowl, mix the cornstarch with water to make a smooth slurry. Slowly pour the slurry into the pot while stirring continuously until the stew thickens to your desired consistency. Use all or part of the slurry as needed.
