Instructions

  1. Prepare Chicken: One at a time, place the chicken breasts in a 1-gallon zip-lock bag. Using a meat mallet, pound each breast to an even ½-inch thickness for uniform cooking.
  2. Make Marinade and Marinate: Combine olive oil, minced garlic, dried thyme, dried oregano, salt, black pepper, and lemon zest in a 1-gallon zip-lock bag. Add the chicken breasts to the marinade bag and massage to coat evenly. Seal the bag and place it in a bowl in the refrigerator to marinate for at least 4 hours or overnight for maximum flavor.
  3. Preheat Grill: Preheat your grill to high heat. Once hot, oil the grill grates lightly to prevent sticking.
  4. Grill Chicken: Place the marinated chicken breasts on the grill and cook covered for 2 to 3 minutes per side. Avoid overcooking to keep the chicken juicy and tender.
