Taco Meat

  • 1 lbs. taco meat (prepared using crunch wraps recipe)

Fillings and Toppings

  • ½ cup sour cream
  • 2 cups shredded iceberg lettuce
  • ½ cup shredded cheddar cheese
  • 25 mini cherry tomatoes, halved

Base

  • Scoop chips (enough for 50 pieces)


Instructions

  1. Prepare Taco Meat: Cook 1 pound of taco meat according to the crunch wraps recipe. This will be the base filling for your taco bites.
  2. Prepare Vegetables and Cheese: Shred 2 cups of iceberg lettuce and ½ cup of cheddar cheese. Slice 25 mini cherry tomatoes in half.
  3. Prepare Sour Cream Piping Bag: Put the ½ cup sour cream into a sandwich bag and cut a small corner off to create a piping bag for easy application later.
  4. Assemble Taco Bites: Place scoop chips on a large serving platter. Add about ½ teaspoon of the prepared taco meat into each chip.
  5. Add Sour Cream and Lettuce: Pipe sour cream over the meat in each chip, then top with shredded lettuce.
  6. Top with Cheese and Tomato: Sprinkle a little shredded cheddar cheese on each bite and top with half a cherry tomato.
