Instructions
- Preheat Oven: Preheat your oven to 425°F to get it ready for roasting the sweet potatoes evenly and to a perfect crisp.
- Prepare Sweet Potatoes: Wash the sweet potatoes thoroughly and pat them dry. Slice them into ⅓-inch thick rounds for even cooking and optimal texture.
- Coat Sweet Potatoes: Drizzle olive oil on a large rimmed sheet tray. Add the sweet potato rounds and turn them gently to coat evenly with the oil. Use two trays if needed to ensure the rounds do not touch and have room to roast properly.
- Add Seasonings and Honey: Sprinkle all the spices, salt, and pepper evenly over the potato slices. Drizzle 1 tablespoon of honey on top and gently turn the potatoes again to coat them evenly with the seasonings and honey.
- First Roast: Place the trays in the oven and bake for 20 minutes to start the roasting process and develop color and flavor.
- Flip Rounds: Carefully flip each sweet potato round to roast the other side.
- Second Roast: Return the trays to the oven and bake for an additional 25 minutes or until the rounds are golden and crispy around the edges.
- Assemble and Serve: Transfer the roasted sweet potato rounds to a serving platter. Season with a bit more salt, drizzle additional honey according to taste, sprinkle crumbled feta cheese on top, and garnish with fresh chopped chives or parsley. Serve warm for best flavor.
