Ingredients
Scale
Dates
- 10 large Medjool dates
Jam
- 12 ounces frozen raspberries
- 2 tbsp chia seeds
- 1 cup water
- 1 tbsp arrowroot powder
Brownie Layer
- 2/3 cup cocoa powder
- 1/3 cup maple syrup
- 1/3 cup runny nut butter
- 1/2 cup oat flour
- 1/3 cup + 2 tbsp almond milk
- 1 tsp vanilla extract
Melted Chocolate Layer
- 1 cup chocolate chips (Pascha brand recommended)
- 1 tbsp coconut oil
Instructions
- Make the Raspberry Jam: In a medium saucepan over medium heat, combine frozen raspberries, chia seeds, water, and arrowroot powder. Cook for 12 minutes, stirring periodically, until the jam thickens to desired consistency. Remove from heat and let cool slightly.
- Prepare the Brownie Layer: In a mixing bowl, combine cocoa powder, maple syrup, runny nut butter, oat flour, almond milk, and vanilla extract. Mix thoroughly until a smooth batter forms.
- Shape the Brownie Layer: Roll the brownie mixture into small balls or press into silicone ice cube molds. Freeze the brownie bites for 30 minutes to set.
- Assemble the Base: Flatten each Medjool date and place a brownie bite on top to form a layered base.
- Add Raspberry Jam: Scoop a spoonful of the prepared raspberry jam and place it on top of each brownie layer over the dates.
- Set the Bites: Place the assembled bites in the freezer for 1 hour to let the layers set firmly.
- Prepare Melted Chocolate: Gently melt chocolate chips together with coconut oil until smooth and well combined.
- Dip in Chocolate: Dunk each bite into the melted chocolate, ensuring an even coating, then transfer to a tray.
- Chill to Harden: Place the chocolate-coated bites in the fridge for 20 minutes or until the chocolate hardens.
- Storage: Store finished bites in an airtight container in the fridge to keep fresh.
Notes
- Use silicone molds for uniform brownie bite shapes and easy removal.
- Substitute almond milk with any other plant milk if preferred.
- Ensure dates are pitted and soft for easier flattening and assembly.
- Pascha brand chocolate chips are recommended for a dairy-free option, but any chocolate chips can be used.
- Keep the bites refrigerated to maintain texture and prevent melting.
- Arrowroot powder helps thicken the jam without altering flavor.
- Chia seeds add nutrition and help gel the jam naturally.
