Description

This Pickle Grilled Cheese Sandwich combines melty cheddar cheese, tangy kosher dill pickles, and a touch of dried dill, all grilled to crispy perfection in buttered sourdough bread. A delightful twist on a classic grilled cheese with an optional spicy kick from hot sauce.

Ingredients

Scale

Bread and Butter

  • 2 to 3 tablespoons butter
  • 4 slices sandwich bread (like sourdough)

Cheese and Toppings

  • 4 ounces shredded cheddar cheese (about 1 cup), divided
  • 2 kosher dill pickles, thinly sliced and patted dry
  • Pinch dried dill (dill weed)
  • 1 tablespoon hot sauce, optional (such as Sriracha)

Instructions

  1. Butter the Bread: Spread the butter evenly on both sides of each of the 4 slices of bread; adjust amount based on bread size and preference for butteriness.
  2. Assemble Sandwiches: On two slices of bread, layer half of the shredded cheddar cheese (2 ounces or ½ cup). Sprinkle a pinch of dried dill over the cheese. Add the thinly sliced pickles on top, then drizzle with hot sauce if using. Top with the remaining cheddar cheese and place the remaining two slices of bread on top to form two sandwiches.
  3. Preheat Skillet: Heat a 10-inch or 12-inch cast-iron skillet over medium-low to medium heat to ensure even browning without burning.
  4. Cook First Side: Place the sandwiches in the skillet and cook for about 3 to 4 minutes on one side, watching carefully to achieve a golden brown and crispy exterior without burning.
  5. Cook Second Side: Carefully flip the sandwiches and cook for another 3 to 4 minutes until the cheese is melted inside and the bread is crispy and golden brown.
  6. Serve: Remove from skillet and enjoy your perfectly grilled pickle cheese sandwich immediately.

Notes

  • Use medium cheddar or substitute with other good melting cheeses like Gouda, mozzarella, or provolone.
  • Pat pickles dry thoroughly to prevent soggy sandwiches.
  • Keep heat on medium-low to medium to avoid burning and ensure cheese melts properly.
  • Cooking times may vary depending on your stove and pan; watch carefully.
