Description

These Peanut Butter No Bake Cookies are a delicious and easy treat combining creamy natural peanut butter, sweet maple syrup, and wholesome rolled oats, with a hint of vanilla and sea salt. Perfect for a quick snack, these cookies require no oven time and chill overnight to create a chewy, satisfying texture with mini chocolate chips for a sweet touch.

Ingredients

Scale

Wet Ingredients

  • ⅔ cup unsalted natural creamy peanut butter
  • ½ cup maple syrup
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • Heaping ½ teaspoon sea salt

Dry Ingredients

  • 2½ cups whole rolled oats
  • ¼ cup mini chocolate chips

Instructions

  1. Prepare baking sheet: Line a baking sheet with parchment paper and set aside for easy cleanup and to prevent sticking.
  2. Mix wet ingredients: In a medium bowl, combine the peanut butter, maple syrup, melted coconut oil, vanilla extract, and sea salt. Stir well until the mixture is smooth and creamy.
  3. Add dry ingredients: Add the rolled oats and mini chocolate chips to the peanut butter mixture and stir until everything is evenly combined.
  4. Form cookies: Use a 2-tablespoon cookie scoop to portion out the dough. With your hands, shape each portion into a ball, then place on the prepared baking sheet. Flatten each ball into a disk with your fingers; the disks will firm up more as they chill.
  5. Chill: Place the baking sheet in the refrigerator and chill the cookies overnight (about 12 hours) to allow them to firm up and set properly before serving.

Notes

  • If your peanut butter is salted, reduce the sea salt to half a teaspoon initially and adjust to taste.
  • Use natural creamy peanut butter for the best texture and flavor; avoid chunky peanut butter, especially ones with peanut pieces settled at the bottom.
  • For firmer cookies, ensure overnight chilling; shorter chilling times may result in softer cookies.
  • These cookies are best stored in the fridge to maintain their texture and freshness.
