Ingredients

Units Scale

Meat and Aromatics

  • 6-8 slices bacon, chopped
  • 1 lb ground beef
  • 1 small onion, diced
  • 3-4 garlic cloves, minced

Seasonings and Sauces

  • 1 tbsp Kinders Caramelized Onion Burger Seasoning or any favorite burger seasoning
  • 2 tsps Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tbsp dill pickle relish
  • 1 tsp yellow or Dijon mustard

Liquids and Grains

  • 8 oz can tomato sauce
  • 1 cup uncooked long grain white rice (Jasmine rice recommended)
  • 2 1/4 cups beef broth

Cheese

  • 2 cups shredded sharp cheddar cheese or preferred cheese flavor

Instructions

  1. Cook Bacon: In a large pot, cook the chopped bacon until crispy. Remove bacon pieces and set aside, leaving about 1 teaspoon of bacon grease in the pot.
  2. Brown Beef and Vegetables: Add ground beef, diced onion, and minced garlic to the pot with bacon grease. Cook until beef is browned and onions are soft. Drain excess grease.
  3. Add Seasonings: Stir in the garlic, caramelized onion burger seasoning, and Worcestershire sauce. Cook for 1 to 2 minutes to release flavors.
  4. Incorporate Tomato Paste: Add tomato paste and cook for another 1 to 2 minutes while stirring to combine well.
  5. Add Relish, Mustard, and Tomato Sauce: Mix in dill pickle relish, mustard, and tomato sauce evenly into the beef mixture.
  6. Add Rice and Broth: Stir in the uncooked rice and beef broth thoroughly. Bring the mixture to a boil.
  7. Simmer: Once boiling, reduce heat to low. Cover and simmer for 20 minutes until the rice is tender and has absorbed all the liquid.
  8. Add Cheese and Bacon: Remove the pot from heat. Stir in 1 cup of shredded cheese and the reserved crispy bacon. Sprinkle the remaining cheese on top and cover again.
  9. Let Melt: Allow the cheese to melt and become gooey by letting the dish sit covered for 3 to 5 minutes.
  10. Serve: Serve hot and enjoy your one pot bacon cheeseburger rice!

Notes

  • Add a bit of spice by mixing in jalapeños or hot sauce to taste.
  • Ground turkey or chicken can be substituted for ground beef for a lighter version.
  • Optional add-ins like sliced mushrooms or diced bell peppers add extra flavor and nutrition.
  • Leftovers reheat well with a splash of broth to maintain moisture.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze in portioned containers for up to 2 months and reheat with added broth or water for best results.
  • This recipe works well as a make-ahead lunch or freezer-friendly dinner option.
