Kielbasa Bites

  • 2 rings (13.9 ounces each) Kielbasa

Mustard Sauce

  • ¼ cup (62 g) coarse ground Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons light brown sugar
  • 1 teaspoon Worcestershire sauce

Dipping Sauce

  • 2 tablespoons mayonnaise

Garnish

  • Parsley, chopped for garnish


Instructions

  1. Prepare the Kielbasa: Slice the Kielbasa into ¼-inch slices without cutting all the way through by placing the kielbasa between two chopsticks or skewers that act as a cutting guide to prevent slicing completely through.
  2. Cut Into Bite-Sized Pieces: Slice the partly sliced kielbasa crosswise into 1-inch bite-sized pieces, about 3 rings per piece, to make around 20 bites per ring or 40 bites total, and place them in a large bowl or on a baking sheet.
  3. Make Mustard Sauce: In a small bowl, mix together the coarse ground Dijon mustard, apple cider vinegar, brown sugar, and Worcestershire sauce until combined. Divide this mixture evenly into two bowls.
  4. Prepare Dipping Sauce: To one bowl of the mustard mixture, add the mayonnaise and stir well. Cover and refrigerate the dipping sauce while you prepare the bites.
  5. Coat Kielbasa Bites: Pour or brush about half of the remaining mustard sauce over the Kielbasa bites, making sure to get the sauce into each cut section thoroughly. Reserve the remaining sauce for after cooking.
  6. Air Fry Kielbasa: Arrange the coated Kielbasa bites in a single layer in your air fryer basket. Depending on basket size, cook in batches as needed. Air fry at 400°F for 9 minutes, shaking the basket halfway through for even cooking until browned and crispy.
  7. Finish and Serve: Remove the bites from the air fryer and place them on a platter. Drizzle or brush the reserved mustard sauce over the hot bites. Garnish with chopped parsley if desired, and serve warm alongside the chilled mayonnaise-based dipping sauce.

Notes

  • For oven instructions, preheat the oven to 425°F and line a sheet pan with parchment paper. Arrange prepared kielbasa bites on the baking sheet, brush with mustard sauce, and bake for 20 minutes until browned.
  • Using chopsticks or skewers to guide slicing helps create hasselback-style cuts without slicing all the way through.
