Description

A refreshing and tropical Mango Bubble Tea made with sweet tapioca pearls, green tea, ripe mangoes, and creamy plant-based milk. This vegan-friendly beverage is perfect for a deliciously fruity twist on classic bubble tea.

Tapioca Pearls

  • 1 cup cooked tapioca pearls
  • 1 tablespoon brown sugar

Tea Mixture

  • 1 ½ cup boiling water
  • 2 bags green tea

Mango Tea Blend

  • 2 ripe mangoes, cubed or 2 cups frozen mango
  • 1 ½ cups plant-based milk
  • ¼ cup ice (optional)


Instructions

  1. Sweeten Tapioca Pearls: Mix the cooked tapioca pearls with the brown sugar until well coated and set aside to absorb the sweetness.
  2. Brew the Green Tea: Pour boiling water into a mug, add the green tea bags, and let them steep covered for 5 minutes to extract the flavor without bitterness. Remove tea bags and set tea aside.
  3. Blend Mango Tea Mixture: In a blender, combine the cubed or frozen mango, plant-based milk, and the brewed tea. Blend for 2 minutes until the mixture is completely smooth and creamy.
  4. Assemble Bubble Tea: Place the sweetened tapioca pearls into a glass, pour the mango tea blend over the pearls, and add ice if desired for a chilled beverage. Serve immediately.

Notes

  • Use warm water around 80°C (175°F) for brewing green tea to avoid bitterness.
  • Opt for fresh ripe mango during season or high-quality frozen mango or Indian mango puree like Kesar for the best flavor out of season.
  • Adjust sweetness by adding more sweetener if the mango blend is not sweet enough.
  • Consume tapioca pearls within 3-4 hours of cooking to avoid them becoming tough and chewy; store pearls in liquid until use.
