Fruit
- 1 lb fresh strawberries, chopped
- 1 lb fresh pineapple, chopped
- 12 oz fresh blueberries
- 12 oz red grapes, sliced into halves
- 4 kiwis, peeled and chopped
- 3 mandarin oranges, peeled and segmented
- 2 bananas, sliced (optional)
Honey Lime Dressing
- 1/4 cup honey
- 2 tsp lime zest (zest of 2 medium limes)
- 1 1/2 Tbsp fresh lime juice
Instructions
- Prepare the fruit. Wash and chop the strawberries, pineapple, kiwis, and halve the grapes. Peel and segment the mandarin oranges and slice the bananas if using. Combine all fruit (except bananas if preparing in advance) in a large mixing bowl.
- Make the dressing. In a small bowl, whisk together the honey, lime zest, and fresh lime juice until smooth and well combined.
- Toss and serve. Pour the honey lime dressing over the fruit mixture and gently toss to coat all pieces evenly. Serve immediately for best freshness and texture.
Notes
- Fresh mandarin oranges are preferred, but 1 (15 oz) can of mandarin oranges drained well can be used as a substitute.
- Fruit (except bananas) can be chopped up to 1 day in advance and stored in the refrigerator to save time.
- Dressing can be made 1 day ahead, kept chilled, and added just before serving to keep the fruit fresh.
- If adding bananas, add them right before serving to prevent browning.
- This refreshing salad is best served immediately after tossing for optimal flavor and texture.
