Sweet Potato Rounds

Instructions

  1. Preheat the oven: Set your oven to 425°F to get it ready for roasting the sweet potatoes.
  2. Prepare the sweet potatoes: Wash and pat dry the sweet potatoes. Slice them into ⅓-inch thick rounds for even roasting.
  3. Coat with oil: Drizzle olive oil on a large rimmed baking sheet or two if needed. Place the sweet potato rounds on the sheet, making sure they are not touching. Toss to evenly coat each slice with the oil.
  4. Add spices and honey: Sprinkle the cinnamon, smoked paprika, cumin, coriander, red pepper flakes, kosher salt, and black pepper over the potatoes. Drizzle the honey on top, then turn the slices again to ensure each is coated evenly with the seasoning.
  5. First bake: Place the baking sheet in the oven and roast the sweet potatoes for 20 minutes to begin crisping and caramelizing.
  6. Flip and bake again: After 20 minutes, carefully flip each sweet potato round. Return the tray to the oven and roast for an additional 25 minutes, or until the edges are golden and crispy.
  7. Finish and serve: Transfer the sweet potato rounds to a serving platter. Season with a little extra salt, drizzle with additional honey, then sprinkle the crumbled feta cheese and chopped fresh chives or parsley on top. Serve warm.
