Instructions

  1. Prepare Strawberries: Wash, de-stem, and slice fresh strawberries in half or quarters. Reserve half of the berries in a mixing bowl for later use.
  2. Puree Strawberries: Place the remaining half of the strawberries into a blender or food processor and blend until fully puréed.
  3. Combine Ingredients: Pour the strawberry purée, cornstarch, lemon juice, and sugar into a saucepan. Mix well to combine all ingredients evenly.
  4. Cook Glaze: Heat the mixture over medium-high heat until it reaches a gentle boil. Then reduce the heat to low-medium and cook until thickened, which takes a few minutes. Test readiness by dipping a spoon into the glaze; if the back remains coated, it is ready.
  5. Add Vanilla: Remove the saucepan from heat and stir in the vanilla extract until fully incorporated.
  6. Combine with Fresh Berries: Pour the hot strawberry glaze through a mesh strainer into the bowl with the reserved fresh berries. Stir gently until the fresh berries are fully coated with the warm glaze.
  7. Cool and Store: Allow the strawberry glaze to cool to room temperature or chill before using it as a topping. Store leftovers in an airtight container in the refrigerator.
