Ingredients
Scale
Egg Mixture
- 10 eggs
- ½ cup milk or cream
- Salt and pepper to taste
Fillings
- 1 cup shredded cheddar cheese
- ½ cup chopped vegetables (bell peppers, tomatoes, onions)
- ½ cup cooked crumbled bacon or sausage (optional)
- ½ cup chopped turkey (optional)
Other
- Non-stick cooking spray
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the proper temperature for baking the egg bites evenly.
- Prepare Muffin Tin: Generously spray a muffin tin with non-stick cooking spray to prevent the egg bites from sticking during baking.
- Prepare Ingredients: Chop the vegetables you plan to use. If using bacon or sausage, cook and crumble into small pieces. Chop turkey if using.
- Mix Egg Base: In a medium bowl, whisk together eggs, milk or cream, salt, and pepper until fully combined and slightly frothy, similar to scrambled eggs.
- Assemble Egg Bites: Place a handful of chopped vegetables, meat, and a bit of cheese into each muffin tin cavity. Then carefully spoon or pour the egg mixture over the fillings, filling each cavity about 3/4 full.
- Mix Fillings Into Egg Mixture: Use a fork to gently stir the ingredients in each muffin cavity to combine everything evenly.
- Bake: Bake in the preheated oven for 18 minutes or until the egg bites are set in the middle and slightly golden on top.
- Cool and Remove: Allow the egg bites to cool for a few minutes, then carefully loosen edges with a butter knife or spatula and remove from the muffin tin.
- Serve and Store: Serve warm. Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months. Reheat in the microwave for 10 seconds before eating.
Notes
- You can customize the vegetables and meats based on your preferences or dietary restrictions.
- For a dairy-free option, substitute milk or cream with any plant-based milk and omit cheese or use dairy-free cheese.
- Make sure not to overfill muffin tins to prevent spilling while baking.
- Using fresh herbs like chives or parsley can add extra flavor.
- These egg bites can be made ahead and frozen for quick breakfasts during the week.
