Description

A delicious and fresh Grilled Chicken Caprese recipe featuring tender grilled chicken breasts topped with melted mozzarella, ripe tomato slices, fresh basil, and a homemade balsamic reduction for a perfect balance of flavors.

Ingredients

Scale

Chicken and Toppings

  • 4 chicken breasts
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 4 slices mozzarella
  • 4 slices tomato
  • 2 tablespoons basil, sliced

Balsamic Reduction

  • 1/2 cup balsamic vinegar
  • 2 tablespoons light brown sugar

Instructions

  1. Preheat Grill: Preheat your grill to medium-high heat to ensure it reaches the ideal temperature for cooking chicken evenly.
  2. Season Chicken: Season the chicken breasts with Italian seasoning, garlic powder, and onion powder. Sprinkle salt and pepper on both sides according to your taste.
  3. Prepare Grill: Spray the grill grates with non-stick cooking spray to prevent sticking.
  4. Grill Chicken: Place the chicken breasts on the grill and cook until they are nearly fully cooked, about 6-8 minutes per side depending on thickness.
  5. Add Mozzarella: Top each chicken breast with a slice of mozzarella. Close the grill lid and let cook for an additional 2-3 minutes until the cheese melts.
  6. Make Balsamic Reduction: While chicken cooks, add balsamic vinegar and brown sugar to a small saucepan. Simmer over medium heat for 10 minutes or until reduced by half, stirring occasionally. Keep warm.
  7. Assemble and Serve: Remove the chicken from the grill. Top each piece with tomato slices and fresh basil. Drizzle with the warm balsamic reduction. Serve immediately and enjoy!

Notes

  • You can substitute fresh mozzarella with low-moisture mozzarella if preferred.
  • For an extra smoky flavor, consider adding a splash of smoked paprika to the seasoning mix.
  • The balsamic reduction can be made ahead and stored in the refrigerator for up to one week.
  • If you don’t have a grill, this recipe can be made using a grill pan or a stovetop skillet over medium-high heat.
  • Ensure chicken is cooked to an internal temperature of 165°F (74°C) for safety.
