Ingredients
Scale
Chicken and Marinade
- 1 lb. boneless, skinless chicken breasts or thighs, cut into bite size pieces
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- 4 large garlic cloves, minced
- 3 tablespoons Greek seasoning
- 1 large lemon, juiced
- ½ teaspoon salt
- ½ teaspoon freshly cracked black pepper
Instructions
- Prepare Marinade: Combine olive oil, white wine vinegar, minced garlic, Greek seasoning, lemon juice, salt, and black pepper in a ziplock bag or a tightly covered bowl. Shake or stir well to mix all ingredients thoroughly.
- Marinate Chicken: Add the bite-sized chicken pieces into the marinade. Seal the bag or cover the bowl and refrigerate for at least 6 hours or overnight to allow flavors to infuse.
- Preheat Cooking Surface: If grilling, preheat an outdoor grill or a stovetop grill pan to medium-high heat. If using an air fryer, preheat to 370°F. For oven baking, preheat oven to 400°F.
- Prepare Skewers: Remove chicken from the marinade, discarding any leftover marinade. Thread the chicken pieces evenly onto skewers.
- Cook Chicken: Grill chicken skewers until cooked through and internal temperature reaches 165°F, approximately 15 minutes, turning occasionally. For air fryer, cook at 370°F for about 20 minutes, flipping halfway. For oven baking, place chicken in a baking dish and bake for 20 minutes, flipping halfway.
- Rest Chicken: Once cooked, wrap the chicken skewers in foil and let them rest for 5 minutes to retain juiciness and tenderness.
- Serve: Serve the souvlaki hot with your choice of accompaniments such as pita bread, tzatziki sauce, or fresh salad.
Notes
- To store: Keep cooked chicken souvlaki in an airtight container in the refrigerator for up to 5 days. Removing chicken from skewers before storing helps save space and ease servings.
- To freeze: Place chicken pieces in marinade inside a freezer-friendly ziplock bag. Freeze for meal prep convenience. Thaw overnight in the refrigerator before cooking.
- Cooking alternatives: Air fryer method cooks at 370°F for about 20 minutes, flipping halfway. Oven baking at 400°F takes about 20 minutes, flipping halfway for even cooking.
- Use a meat thermometer to ensure chicken reaches 165°F for safe consumption.
