Instructions

  1. Preheat the Skillet: Heat a 12-inch non-stick skillet over medium-high heat to prepare for cooking the chicken.
  2. Prepare the Chicken: Pat the chicken pieces dry with paper towels to help the coating adhere better.
  3. Coat the Chicken: Sprinkle the flour, Italian seasoning, salt, and pepper evenly over the chicken. Toss well until all the chicken pieces are fully coated with the flour mixture, with no excess flour left behind.
  4. Heat Fat in Skillet: Add 1 tablespoon of olive oil and 1 tablespoon of butter to the preheated skillet, allowing the butter to melt quickly. Tilt the pan to coat the bottom evenly with the fat.
  5. Cook the Chicken: Arrange the chicken pieces in a single layer with some space between them so they brown instead of steam. Cook for about 3 minutes until the bottom is golden brown, then flip and cook for an additional 2 minutes until almost cooked through.
  6. Add Garlic, Butter, and Parsley: Add the remaining 2 tablespoons of butter in small pieces, along with the minced garlic and chopped parsley. Cook for 1 more minute until the chicken reaches an internal temperature of 165°F and is no longer pink in the center.
  7. Serve Immediately: Remove the chicken bites from the skillet and serve right away for best flavor and texture.
