Description

Shrimp and Pasta

  • 1 pound uncooked (31-40/pound size) shrimp thawed & peeled, tails optional
  • 8 ounces uncooked fettuccine

Sauce

  • 2 tablespoons butter
  • 4 ounces cream cheese softened & cut into smaller pieces
  • 3/4 cup heavy/whipping cream
  • 1/4 cup chicken broth
  • 2 large cloves garlic minced
  • 1 cup freshly grated parmesan cheese
  • Salt & pepper to taste


Instructions

  1. Prep the Shrimp: If using frozen shrimp, place them in a colander and rinse under cool water until fully thawed. Peel and remove tails if preferred.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
  3. Make the Alfredo Sauce: In a skillet over medium heat, combine butter, cream cheese, heavy cream, chicken broth, and minced garlic. Stir frequently, using a spoon to help melt the cream cheese into the sauce, which will take a few minutes.
  4. Simmer the Sauce: Allow the sauce to gently bubble and reduce for 5 minutes, stirring occasionally to prevent sticking. During this time, grate the parmesan cheese.
  5. Add Parmesan Cheese: Stir the freshly grated parmesan into the sauce and cook for about one minute until fully incorporated and creamy.
  6. Cook the Shrimp: Add the shrimp to the skillet and cook for 5 to 6 minutes, stirring occasionally until the shrimp are pink and cooked through.
  7. Combine and Season: Season the sauce and shrimp with salt and pepper to taste. Toss the drained fettuccine into the skillet with the sauce and shrimp until well coated.
  8. Serve Immediately: Plate the Shrimp Alfredo hot and enjoy.

Notes

  • If the cream cheese is not softened, microwave it in 20-30 second intervals until soft to make it easier to incorporate into the sauce.
