Description

This Easy Pumpkin Soup is a comforting and flavorful dish perfect for chilly days. Made with smooth pumpkin puree, aromatic spices, and a hint of heat, it’s a quick and simple recipe to warm you up. Topped with crunchy pepitas and creamy sour cream, this soup balances sweet, smoky, and spicy notes beautifully.

Ingredients

Scale

Main Ingredients

  • 2 Tbsp butter
  • 1 small yellow onion
  • 1 15oz. can pumpkin puree
  • 3 cups chicken broth
  • 1/2 tsp chili powder
  • 1/4 tsp nutmeg
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • freshly cracked black pepper to taste
  • salt to taste

Toppings (optional)

  • 4 Tbsp pepitas (pumpkin seeds)
  • 4 Tbsp sour cream

Instructions

  1. Prepare the base: Dice the onion finely and add it to a medium-sized sauce pot along with the butter. Sauté the onion over medium heat until it becomes soft and translucent, approximately 3 minutes.
  2. Add spices and liquids: Pour in the pumpkin puree and chicken broth, then add smoked paprika, chili powder, cayenne pepper, nutmeg, and freshly cracked black pepper. Stir the ingredients together thoroughly to combine.
  3. Simmer the soup: Bring the mixture up to a simmer over medium heat. Let it simmer gently for 10 minutes to allow the flavors to meld.
  4. Season to taste: After simmering, taste the soup and add salt as needed, starting with about 1/4 teaspoon. Stir well.
  5. Serve and garnish: Ladle the soup into bowls and top each serving with a spoonful of pepitas and a swirl of sour cream for added texture and creaminess.

Notes

  • For a vegan version, substitute butter with olive oil and chicken broth with vegetable broth, and replace sour cream with a plant-based alternative.
  • If you prefer a smoother texture, use an immersion blender to puree the soup before serving.
  • Adjust cayenne pepper cautiously to control the heat level.
  • Pepitas can be toasted lightly for extra crunch and flavor.
  • The soup keeps well refrigerated for up to 3 days and can be reheated gently on the stovetop.
