Description

These Easy Garlic Rosemary Focaccia Muffins are soft, fluffy, and packed with fragrant garlic and fresh rosemary. Made with store-bought pizza dough, they come together quickly and are perfect as a savory snack or side dish.

Ingredients

Units Scale

Dough and Base

  • 1.5 pounds store-bought pizza dough
  • 1/2 scant cup extra virgin olive oil

Flavorings

  • 8 cloves garlic
  • 4 sprigs fresh rosemary
  • flaky salt

Instructions

  1. Prepare the Dough: If time allows, place the pizza dough in a lightly greased bowl and let it come to room temperature to make it easier to work with and help it rise better.
  2. Cut the Dough: Using a bench scraper or sharp knife, cut the dough ball into 12 even slices. The pieces do not need to be perfectly shaped. Avoid overworking the dough to preserve air bubbles.
  3. Oil the Muffin Pan: Pour 1 teaspoon of olive oil into each cup of a standard muffin pan to prevent sticking and add flavor.
  4. Shape Dough Balls: Gently shape each piece of dough into a rough ball and place it in the oiled muffin cups without deflating the air bubbles.
  5. Rest the Dough: Cover the muffin pan with a towel and let it rest near the oven while it preheats to 400 degrees Fahrenheit. This warmth helps the dough rise and develop flavor.
  6. Prepare Garlic and Rosemary: Chop the garlic cloves finely and strip the rosemary leaves from the sprigs, then chop them as well. Set aside.
  7. Infuse Olive Oil: Heat the remaining olive oil over medium heat until sizzling. Remove from heat and carefully add the chopped garlic and rosemary. Stir until the sizzling stops to infuse the oil with flavor.
  8. Add Garlic Herb Oil: Spoon a generous amount of the garlic and rosemary olive oil over each dough ball, making sure to use all the infused oil.
  9. Create Dimples: Use two fingers to press into each dough ball, creating dimples that help the garlic and rosemary adhere and enhance the focaccia texture.
  10. Bake the Muffins: Bake at 400 degrees Fahrenheit for 16 minutes or until golden brown on top. If the tops brown too quickly, loosely cover with foil to prevent burning.

Notes

  • Pizza Dough: Fresh pizza dough can be found in most grocery stores’ refrigerated bakery sections or use canned pizza dough if fresh is unavailable.
  • Handle Dough Gently: Avoid overworking the dough to preserve air bubbles for a light, fluffy texture.
  • Rest Dough During Oven Preheat: Letting the dough rest near the warming oven encourages it to puff up and develop flavor.
  • Generous Olive Oil Use: Don’t skimp on the olive oil; it adds flavor, prevents sticking, and helps the herbs adhere to the dough.
  • Cover with Foil if Needed: Use foil to shield muffins if they brown too fast before fully baking.
