Description

This Easy Blueberry Cobbler is a delightful dessert featuring a buttery biscuit topping baked over sweet, juicy blueberries. Perfectly spiced with cinnamon and ginger, it’s a warm treat ideal for any occasion and pairs beautifully with ice cream or whipped cream.

Ingredients

Scale

For the Batter

  • 1 stick salted butter, cubed
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1 cup brown sugar
  • 2 tablespoons molasses
  • 1 tablespoon vanilla extract

For the Blueberries

  • 4-5 cups fresh or frozen blueberries (do not thaw)
  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour

Instructions

  1. Preheat Oven: Preheat your oven to 375°F to prepare for baking the cobbler.
  2. Melt Butter: Place the cubed butter in a 9×13 inch baking dish and put it in the oven for about 10 minutes until the butter is fully melted.
  3. Prepare Batter: In a mixing bowl, combine 1 cup plus 2 tablespoons of flour, baking powder, ground ginger, cinnamon, and salt. Add the whole milk, 1 cup brown sugar, molasses, and vanilla extract; stir well until the batter is smooth and thoroughly mixed.
  4. Coat Blueberries: In another bowl, toss the blueberries with 1/4 cup brown sugar and 2 tablespoons flour to coat them evenly.
  5. Assemble Cobbler: Pour the batter over the melted butter in the baking dish without stirring. Evenly spoon the coated blueberries over the top of the batter.
  6. Bake: Bake the cobbler for 55 minutes or until the center is set and the edges turn a light golden brown.
  7. Serve: Allow the cobbler to cool slightly before serving warm, ideally paired with ice cream or whipped cream for extra indulgence.

Notes

  • Use frozen blueberries without thawing to prevent excess moisture in the cobbler.
  • For a dairy-free option, substitute whole milk with almond or coconut milk and use vegan butter.
  • Adjust the amount of brown sugar if you prefer a sweeter or less sweet cobbler.
  • To add texture, sprinkle some chopped nuts like pecans or walnuts on top before baking.
  • Store leftovers covered in the refrigerator for up to 3 days and reheat before serving.
