- 1 1/2 cups all purpose flour
- 1/4 cup granulated sugar

- 1/2 cup soy milk
- 2 large apples (Granny Smith, Honeycrisp or other crisp variety), diced

Simple Glaze
- 3 cups powdered sugar
- 1/3 cup soy milk
- 1/2 teaspoon pure vanilla extract
Instructions
- Mix dry ingredients: In a large bowl, combine the flour, sugar, baking powder, salt, and ground cinnamon. Stir until evenly mixed.
- Add wet ingredients: Add the unsweetened applesauce and soy milk to the dry ingredients. Mix gently until just combined, being careful not to overmix the batter.
- Fold in apples: Carefully fold the diced apples into the batter until they are evenly distributed.
- Heat oil: Pour about 2 inches of vegetable oil into a large, heavy skillet or pot and heat it to 375 degrees Fahrenheit using a thermometer for accuracy.
- Shape and fry fritters: Scoop 1/3 cup of the batter and carefully place it into the hot oil. Flatten the batter gently to spread it out. Cook each fritter for 2 to 3 minutes on one side until golden brown, then flip and cook for another 1 to 2 minutes until browned and cooked through.
- Drain fritters: Use a slotted spoon or tongs to remove fritters from the oil and place them on a cooling rack set over parchment paper or a pan to catch excess oil and drips from the glaze.
- Repeat frying: Continue frying the remaining batter in batches until all fritters are cooked. Then turn off the heat.
- Prepare glaze: In a small to medium bowl, whisk together the powdered sugar, soy milk, and vanilla extract until smooth and pourable.
- Glaze fritters: Dunk each warm fritter into the glaze, coating it thoroughly, then place it back on the rack to let the glaze set and drip.
- Serve: Allow the glaze to harden for a few minutes before serving for best texture and flavor.
Notes
- Use a high smoke point oil such as peanut, vegetable, or canola oil for frying to prevent burning.
- For a gluten free version, a quality gluten free flour blend can likely be substituted, though results may vary.
- Baking the fritters is possible but they won’t be as crispy. Bake at 350°F for 30 minutes on a greased sheet and spray the tops with oil for better texture.
