Description

This comforting recipe features juicy hamburger steaks cooked to perfection and served in a rich, creamy dill sauce. Made with ground beef, onions, and breadcrumbs, the patties are pan-fried then simmered in a flavorful sauce combining garlic, dill, and cream for a hearty, satisfying meal perfect for dinner.

Ingredients

Scale

Hamburger Steaks

  • 1.3 pounds ground beef
  • 4 tbsp breadcrumbs
  • 1 yellow onion – grated
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp heavy cream
  • 1 egg

Creamy Dill Sauce

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 yellow onion – diced
  • 2 garlic cloves – minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp all-purpose flour
  • ½ cup low sodium chicken broth
  • 1 cup heavy cream
  • 2 tbsp chopped dill, plus more for serving

Instructions

  1. Prepare hamburger mixture: Grate the onion into a large bowl. Add the ground beef, breadcrumbs, salt, black pepper, heavy cream, and egg. Mix with your hands gently until just combined to avoid overworking the meat.
  2. Shape the steaks: Divide the beef mixture into 4 equal portions. Shape each portion into a ball, then press down with your palm or a spatula to form patties about ¾ inch (2 cm) thick. Set aside.
  3. Chop aromatics: Finely dice the remaining onion, mince the garlic cloves, and chop the dill. These will be used for the sauce.
  4. Cook hamburger steaks: Heat olive oil and butter in a large nonstick skillet over medium heat. Add the hamburger steaks and cook for 5 minutes on the first side until browned, then flip and cook another 5 minutes until browned on the other side. Transfer the steaks to a plate to rest.
  5. Make the sauce base: Reduce heat to low and add the diced onion and minced garlic to the skillet. Cook for about 2 minutes until fragrant and softened. Stir in salt, black pepper, and flour, mixing well to form a roux.
  6. Build the sauce: Slowly pour in the chicken broth while scraping up browned bits from the skillet bottom with a wooden spoon. Let the mixture simmer for 2 minutes to thicken slightly.
  7. Add cream and dill: Stir in the heavy cream and chopped dill. Bring the sauce to a gentle boil, then simmer for 1-2 minutes until it thickens to a creamy consistency.
  8. Finish cooking steaks in sauce: Return the hamburger steaks to the skillet with the sauce. Simmer for 5-6 minutes until the patties are fully cooked through and heated.
  9. Serve: Garnish with additional chopped dill and freshly grated black pepper. Serve hot with your favorite sides.

Notes

  • For best results, avoid overmixing the ground beef mixture to keep the patties tender.
  • You can substitute ground turkey or chicken for a leaner option, but cook until fully done.
  • If you prefer a thicker sauce, let it simmer a few extra minutes before returning the steaks to the pan.
  • Breadcrumbs can be replaced with crushed crackers or oats if needed.
  • Serve with mashed potatoes, rice, or steamed vegetables to complete the meal.
