Description

  • 1 8 ounce round Brie cheese
  • 1 sheet frozen puff pastry, thawed in the refrigerator
  • Flour, for dusting work surface
  • ¾ cup cranberry sauce
  • ½ cup finely chopped pecans
  • Sprigs of rosemary for garnish
  • Sea salt to taste


Instructions

  1. Prepare Brie: Cut off and discard the rind from the brie cheese. Place the cheese on a parchment-lined plate in the freezer for 20 minutes to firm it up for easier cutting.
  2. Preheat Oven and Prepare Pan: Preheat your oven to 375℉ and generously grease a 24-cup mini muffin pan with cooking spray. Set it aside.
  3. Roll and Cut Puff Pastry: On a lightly floured surface, roll the thawed puff pastry sheet into a 10×14-inch rectangle. Cut lengthwise into 4 strips, then crosswise into 6 strips to make 24 squares. Gently press each square into the muffin cups and prick the bottom with a fork to prevent puffing up.
  4. Cut Brie into Pieces: Remove the chilled brie from the freezer and cut into 24 pieces, about ¾-inch each.
  5. Assemble Bites: Spoon 1 teaspoon of cranberry sauce into each muffin cup. Press in a piece of brie and top with 1 teaspoon of finely chopped pecans. Sprinkle a little sea salt on top if desired.
  6. Bake: Bake in the preheated oven for 20 minutes or until the puff pastry is golden brown. Remove and allow to cool slightly.
  7. Serve: Carefully remove the bites from the muffin pan. Serve warm or at room temperature, garnished with sprigs of rosemary for a festive touch.
