- 1 8 ounce round Brie cheese
- 1 sheet frozen puff pastry, thawed in the refrigerator
- Flour, for dusting work surface
- ¾ cup cranberry sauce
- ½ cup finely chopped pecans
- Sprigs of rosemary for garnish
- Sea salt to taste
Instructions
- Prepare Brie: Cut off and discard the rind from the brie cheese. Place the cheese on a parchment-lined plate in the freezer for 20 minutes to firm it up for easier cutting.
- Preheat Oven and Prepare Pan: Preheat your oven to 375℉ and generously grease a 24-cup mini muffin pan with cooking spray. Set it aside.
- Roll and Cut Puff Pastry: On a lightly floured surface, roll the thawed puff pastry sheet into a 10×14-inch rectangle. Cut lengthwise into 4 strips, then crosswise into 6 strips to make 24 squares. Gently press each square into the muffin cups and prick the bottom with a fork to prevent puffing up.
- Cut Brie into Pieces: Remove the chilled brie from the freezer and cut into 24 pieces, about ¾-inch each.
- Assemble Bites: Spoon 1 teaspoon of cranberry sauce into each muffin cup. Press in a piece of brie and top with 1 teaspoon of finely chopped pecans. Sprinkle a little sea salt on top if desired.
- Bake: Bake in the preheated oven for 20 minutes or until the puff pastry is golden brown. Remove and allow to cool slightly.
- Serve: Carefully remove the bites from the muffin pan. Serve warm or at room temperature, garnished with sprigs of rosemary for a festive touch.

- Be generous when greasing the muffin tin to prevent the brie bites from sticking.
- It helps to remove the bites from the muffin pan while they are still hot to avoid breaking.
- Store the bites in an airtight container at room temperature for up to 3 days.
- Freeze leftovers for up to 2 months. Freeze bites on a parchment-lined tray for 1 hour before placing in a sealed container.
