Instructions

  1. Prepare Yogurt Mixture: Add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract to a large bowl and combine thoroughly until evenly mixed.
  2. Form Clusters: Scoop about 2 tablespoons of the yogurt mixture and form clusters on a parchment paper-lined baking sheet or large plate. You should be able to make 10 clusters.
  3. Freeze Clusters: Place the baking sheet with the yogurt clusters in the freezer and freeze until completely solid, about 2 hours.
  4. Melt Chocolate: Add the semi-sweet chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 15 to 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
  5. Coat Yogurt Clusters: Remove the frozen yogurt clusters from the freezer. Use a spoon to carefully dip each cluster into the melted chocolate, making sure they are thoroughly coated. Place coated clusters back on the parchment-lined baking sheet and optionally sprinkle with sea salt.
  6. Final Freeze: Place the chocolate-coated clusters back into the freezer for a few minutes to allow the chocolate to harden and the yogurt to solidify a bit more before serving.
