Description

Indulge in these delicious Chocolate Covered Dates Stuffed with Peanut Butter, a perfect blend of sweet and nutty flavors wrapped in a healthy, bite-sized treat. Easy to prepare and ideal for a quick snack or dessert.

Ingredients

Scale

Stuffed Dates

  • 12 Medjool dates
  • 1/3 cup all-natural smooth peanut butter
  • 1/4 cup peanuts chopped

Chocolate Coating

  • 1/2 cup semi-sweet chocolate chips
  • 1 tsp coconut oil
  • pinch flaky sea salt (optional for sprinkling)

Instructions

  1. Prepare the Dates: Line a baking sheet with parchment paper. Cut a slit into the center of each date lengthwise and remove the pit carefully without cutting all the way through to create a pocket for stuffing.
  2. Stuff the Dates: Generously fill the inside of each date with smooth peanut butter and sprinkle chopped peanuts on top. Arrange the stuffed dates on the prepared baking sheet.
  3. Melt the Chocolate: In a small bowl, combine semi-sweet chocolate chips and coconut oil. Melt the mixture in the microwave in 30-second increments, stirring between each, until smooth and fully combined.
  4. Coat the Dates: Drizzle the melted chocolate over the stuffed dates to coat them evenly. Optionally, sprinkle a pinch of flaky sea salt over the chocolate for a contrasting flavor.
  5. Chill: Refrigerate the chocolate-covered dates until the chocolate hardens completely, approximately 30 minutes, before serving.

Notes

  • Store leftover stuffed dates in the refrigerator for up to 2 weeks to maintain freshness.
  • For a nut-free version, substitute peanut butter with sunflower seed butter and omit peanuts.
  • Nutritional information is a rough estimate and may vary based on ingredient brands.
  • Use fresh Medjool dates for the best texture and sweetness.
