  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan

Instructions

  1. Prepare the aromatics: Dice the yellow onion and mince the garlic cloves. Heat the olive oil in a skillet over medium heat and sauté the onion and garlic until the onion becomes soft and transparent, approximately 3 to 5 minutes.
  2. Add chipotle powder: Sprinkle in the chipotle powder and continue to sauté the mixture for about one minute to release the smoky, spicy flavors.
  3. Create the sauce: Stir in the pumpkin purée, chicken broth, salt, and freshly cracked pepper into the skillet. Mix thoroughly until the sauce is smooth and combined.
  4. Simmer the sauce: Reduce the heat to medium-low and let the sauce simmer gently for 15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  5. Cook the pasta: While the sauce simmers, cook the pasta according to the package instructions until al dente. Drain the pasta in a colander once cooked.
  6. Finish the sauce: After simmering, lower the heat to low and stir in the heavy cream to add a creamy richness to the sauce.
  7. Combine pasta and sauce: Add the cooked and drained pasta to the skillet with the sauce. Stir to combine well and let the pasta heat through in the sauce over low heat for 2 to 3 minutes.
  8. Serve: Stir in the grated Parmesan cheese, top with additional freshly cracked pepper to taste, and serve the pasta warm.
