Ingredients
Scale
Sauce
- 1 yellow onion
- 1 Tbsp olive oil
- 2 cloves garlic
- 1/2 tsp chipotle powder
- 1 15oz. can pumpkin purée
- 1.5 cups chicken broth
- 1/2 tsp salt
- freshly cracked pepper
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan
Pasta
- 8 oz. pasta
Instructions
- Prepare the aromatics: Dice the yellow onion and mince the garlic cloves. Heat the olive oil in a skillet over medium heat and sauté the onion and garlic until the onion becomes soft and transparent, approximately 3 to 5 minutes.
- Add chipotle powder: Sprinkle in the chipotle powder and continue to sauté the mixture for about one minute to release the smoky, spicy flavors.
- Create the sauce: Stir in the pumpkin purée, chicken broth, salt, and freshly cracked pepper into the skillet. Mix thoroughly until the sauce is smooth and combined.
- Simmer the sauce: Reduce the heat to medium-low and let the sauce simmer gently for 15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Cook the pasta: While the sauce simmers, cook the pasta according to the package instructions until al dente. Drain the pasta in a colander once cooked.
- Finish the sauce: After simmering, lower the heat to low and stir in the heavy cream to add a creamy richness to the sauce.
- Combine pasta and sauce: Add the cooked and drained pasta to the skillet with the sauce. Stir to combine well and let the pasta heat through in the sauce over low heat for 2 to 3 minutes.
- Serve: Stir in the grated Parmesan cheese, top with additional freshly cracked pepper to taste, and serve the pasta warm.
Notes
- Use a good quality, full-flavored chicken broth such as Better Than Bouillon for the best taste, rather than watery boxed or canned varieties.
- Heavy cream adds richness to the sauce; you may substitute with half-and-half for a lighter version.
- Adjust chipotle powder quantity if you prefer less or more heat.
- Parmesan can be replaced with Pecorino Romano for a sharper flavor.
- For a vegetarian version, replace chicken broth with vegetable broth and ensure Parmesan is vegetarian-friendly.
