Description

A flavorful and spicy Chipotle Chicken Avocado Melt sandwich combining smoky chicken, creamy avocado, melted cheese, and a zesty chipotle sauce, all toasted perfectly on sourdough bread.

For the sandwich:

  • 1 tablespoon olive oil
  • 2 slices sourdough bread
  • 1/4 avocado (sliced)
  • 2 ounces smoked chicken breast (sliced)
  • 3 Peppadew peppers (sliced)
  • 1 tablespoon fresh chopped cilantro
  • 1 slice Chao creamy original cheese
  • 12 tablespoons chipotle sauce

For the chipotle sauce:

  • 1 tablespoon chipotle adobo sauce
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)
  • 1/4 teaspoon coarse salt


Instructions

  1. Prepare chipotle sauce: In a small bowl, stir together the chipotle adobo sauce, mayonnaise, lemon juice, minced garlic, and coarse salt until smooth. Adjust seasoning to taste and set aside.
  2. Heat skillet and prepare bread: Heat a large skillet over medium-high heat. Brush olive oil onto the outer sides of each slice of sourdough bread.
  3. Assemble sandwich in skillet: Place one slice of bread in the skillet, oiled side down. Layer with the slice of Chao creamy original cheese first, followed by smoked chicken breast, sliced avocado, Peppadew peppers, and fresh chopped cilantro. Spread 1 to 2 tablespoons of the prepared chipotle sauce on the inside of the second slice of bread, then place it on top, chipotle sauce side down.
  4. Cook sandwich until golden: Cook the sandwich until the bottom is golden brown and the cheese has melted, about 3 to 4 minutes. Carefully flip the sandwich and continue to cook until the other side is toasted and golden brown, about 2 to 3 minutes.
  5. Serve: Remove the sandwich from the skillet and slice in half before serving.

Notes

  • Peppadew peppers add a sweet and mildly spicy flavor; you can substitute with mild pickled jalapeños if unavailable.
  • Chao creamy original cheese is a vegan cheese alternative; you can use any melty cheese such as Monterey Jack or mozzarella if preferred.
  • Adjust the amount of chipotle adobo sauce in the chipotle sauce based on your desired spice level.
  • Use smoked chicken breast for a smoky flavor; grilled or rotisserie chicken can be a good substitute.
