Description

A flavorful and sweet Brown Sugar Pineapple Chicken recipe combining tangy pineapple juice, rich brown sugar, and smoky BBQ sauce for a delicious grilled chicken dish perfect for any meal.

Marinade

  • 1 cup pineapple juice
  • 6 Tbsp brown sugar
  • 6 Tbsp BBQ sauce

Chicken

  • 1.5 to 2 lb boneless chicken tenders


Instructions

  1. Prepare Marinade: Whisk together pineapple juice, brown sugar and BBQ sauce until the sugar is dissolved and the mixture is well combined. Reserve 1/4 cup of the marinade for later use.
  2. Marinate Chicken: Place chicken tenders into a gallon-sized ziplock bag. Pour the remaining marinade over the chicken. Seal the bag tightly and refrigerate for 2 to 4 hours to allow the flavors to penetrate.
  3. Grill Chicken: Remove the chicken from the marinade and discard the used marinade. Preheat the grill and cook the chicken tenders for 8 to 10 minutes until fully cooked, turning occasionally.
  4. Brush with Reserved Marinade: During the last few minutes of grilling, brush the chicken on both sides with the reserved 1/4 cup of marinade to enhance flavor and moisture.
  5. Serve: Remove the chicken from grill and serve immediately for best taste and texture.

Notes

  • Marinating the chicken for the full 4 hours will develop the deepest flavor.
  • You can substitute chicken breasts cut into strips if tenders are unavailable.
  • If no grill is available, you can pan-fry the chicken, but grilling adds a smoky flavor.
  • Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F for safety.
  • Reserve some marinade to brush the chicken during cooking but do not use leftover marinade that the raw chicken was in unless boiled first.
