Marinade
- 1 cup pineapple juice
- 6 Tbsp brown sugar
- 6 Tbsp BBQ sauce
Chicken
- 1.5 to 2 lb boneless chicken tenders
Instructions
- Prepare Marinade: Whisk together pineapple juice, brown sugar and BBQ sauce until the sugar is dissolved and the mixture is well combined. Reserve 1/4 cup of the marinade for later use.
- Marinate Chicken: Place chicken tenders into a gallon-sized ziplock bag. Pour the remaining marinade over the chicken. Seal the bag tightly and refrigerate for 2 to 4 hours to allow the flavors to penetrate.
- Grill Chicken: Remove the chicken from the marinade and discard the used marinade. Preheat the grill and cook the chicken tenders for 8 to 10 minutes until fully cooked, turning occasionally.
- Brush with Reserved Marinade: During the last few minutes of grilling, brush the chicken on both sides with the reserved 1/4 cup of marinade to enhance flavor and moisture.
- Serve: Remove the chicken from grill and serve immediately for best taste and texture.
Notes
- Marinating the chicken for the full 4 hours will develop the deepest flavor.
- You can substitute chicken breasts cut into strips if tenders are unavailable.
- If no grill is available, you can pan-fry the chicken, but grilling adds a smoky flavor.
- Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F for safety.
- Reserve some marinade to brush the chicken during cooking but do not use leftover marinade that the raw chicken was in unless boiled first.
