Egg Rolls

  • 1 pound ground beef
  • 1 tablespoon hamburger seasoning
  • 1/2 small yellow onion, finely chopped (about 1/4 cup)
  • 4 large dill pickles, finely diced (about 1 cup)
  • 1 1/2 cups sharp cheddar cheese, shredded (about 169.5 g)
  • 10 egg roll wrappers
  • 1 recipe onion bacon jam, prepared (approximately 10 tablespoons total)

Dipping Sauce

  • 1/4 cup mayonnaise (about 58 g)
  • 2 teaspoons mustard
  • 2 teaspoons ketchup

Instructions

  1. Cook the Beef: In a medium skillet over medium heat, add 1 pound ground beef and 1 tablespoon hamburger seasoning. Cook, stirring occasionally, until no pink remains, about 10 minutes. Remove from heat and drain excess oil.
  2. Prepare Wrappers: Lay out 10 egg roll wrappers on a clean surface for assembly.
  3. Assemble Egg Rolls: Work with one wrapper at a time. Near the center, add 1 tablespoon prepared onion bacon jam, ¼ cup cooked hamburger mixture, 1 teaspoon diced onion, 1 ½ tablespoons diced pickles, and 2 tablespoons shredded cheddar cheese.
  4. Roll the Egg Rolls: Lightly wet the edges of the wrapper with water. Fold the bottom corner up over the filling and roll once. Then fold in the right and left corners to the center, pressing lightly to seal. Continue rolling fully and press edges to seal tightly.
  5. Preheat Air Fryer: Set air fryer to 400°F for a few minutes until ready.
  6. Air Fry Egg Rolls: Place the egg rolls in the air fryer basket in a single layer (work in batches if needed). Lightly spray tops with nonstick cooking spray. Air fry for 4 minutes, flip and spray again, then cook another 4 minutes or until golden brown and crispy.
  7. Make Dipping Sauce: While egg rolls cook, mix ¼ cup mayonnaise, 2 teaspoons mustard, and 2 teaspoons ketchup in a small bowl until smooth.

Notes

  • For frying in oil: Heat 2–3 inches of vegetable oil to 350°F in a deep pot. Fry 2–3 egg rolls at a time for about 3 minutes per side until golden brown. Drain on paper towels.
  • For baking: Preheat oven to 375°F, line a baking sheet with parchment paper, arrange egg rolls in a single layer, and spray or brush tops with oil. Bake 20 minutes, flipping halfway through, until crispy and golden.
  • Make sure to seal the egg rolls tightly to prevent filling from leaking during cooking.
  • You can substitute sharp cheddar with another cheese like Monterey Jack or Colby for different flavors.
