Description

A delicious and easy-to-make Apple and Blueberry Crumble featuring a sweet and tangy fruit filling topped with a crunchy oat and brown sugar crumble. Perfectly baked until golden brown and served warm, this dessert pairs wonderfully with vanilla ice cream or whipped cream.

Ingredients

Scale

Apple Blueberry Filling

  • 3 cups blueberries
  • 2 medium apples peeled, cored and thinly sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons all purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Crumble Topping

  • 3/4 cup all purpose flour
  • 3/4 cup rolled oats
  • 3/4 cup brown sugar packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter melted

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees Fahrenheit and lightly spray a 9-inch pie pan or 2-quart baking dish with non-stick spray.
  2. Prepare Fruit Filling: In a large bowl, combine the blueberries, sliced apples, granulated sugar, fresh lemon juice, all purpose flour, ground cinnamon, and salt. Stir gently until all the fruit is evenly coated and mixed well.
  3. Transfer Filling: Pour the fruit mixture into the prepared baking dish and set it aside for now.
  4. Make Crumble Topping: In a medium bowl, mix together the all purpose flour, rolled oats, brown sugar, ground cinnamon, and salt. Add the melted vegan butter and stir until the mixture becomes crumbly with some larger clusters.
  5. Assemble Crumble: Sprinkle the crumble topping evenly over the fruit mixture in the baking dish. Use your hands to create some larger chunks in the topping for texture.
  6. Bake: Bake the crumble in the preheated oven for 40 minutes until the topping is golden brown and the apples are tender. The sides should be bubbly when done.
  7. Serve: Serve the apple and blueberry crumble warm, optionally accompanied by vanilla ice cream or whipped cream. Enjoy your dessert!

Notes

  • You can substitute frozen blueberries if fresh are not available.
  • Feel free to replace apples with other fruits such as strawberries, peaches, or pears.
  • For a gluten free version, use gluten free all purpose flour and ensure rolled oats are gluten free certified.
  • Coconut oil can be used instead of vegan butter for the crumble topping.
